Soba Shinonome
At Soba-Shinonome, you can try the nihachi soba that is made by milling wholegrain buckwheat at the watermill in the park using a quern-stone and then adding water drawn from a spring on the skirt of the Tanzawa Mountains.
The spring is known as one of the “100 Famous Springs of Japan.”
Freshly milled, pulled and boiled nihachi soba (soba made of two parts wheat flour, eight parts buckwheat flour) made of choice buckwheat flour and water is served here.
You can also participate in a soba-pulling workshop at the soba dojo to make soba noodles with your own hands.
