GANSO-SHIMADA-YA was established during the Bunkyu era (1861-1864), around the end of Japan’s feudal age.
It is thus considered one of the shops that laid the groundwork for today’s Jindaiji soba culture.
It stands right in front of the main gate of Jindaiji Temple.
Enjoy their Jindaiji soba made with care by the fifth-generation owner who has succeeded the shop’s long tradition of soba-making.
The natural surroundings of the shop are also beautiful in each season, with Jindaiji Temple and Kamejima Benzaiten Pond nearby.
The spacious soba shop has both chairs and zashiki-style seating, and it welcomes both solo customers and large groups.


GANSO-SHIMADA-YA: Recommended soba menus

Since the time of its establishment, GANSO-SHIMADA-YA has been making soba noodles with a firm texture that complements the soft flavor of soba itself.
Select, Aomori-produced soba flour is used in order to maintain the flavor of the soba made here for generations. Since soba flour doesn’t do well with heat and air, it is milled using a traditional method with a stone mill, instead of using a machine.
Natural spring water is used to rinse the soba noodles after they are boiled, in order to make the best kind of soba noodles that have a firm texture.

○ Musashino set (three-topping soba with vegetable tempura) 1,900 yen
The Musashino set is a popular menu item coupling vegetable tempura with soba noodles topped with wild vegetables, nameko mushrooms, grated daikon radish, and fried eggs strips.

○ Wild plant tempura set 1,800 yen
This set consists of tempera of wild plants such as Japanese parsley, watercress, dandelion, and mugwort.
The slightly sweet soup is a perfect match with the tempera of the slightly bitter and aromatic plants.

“Soba is a health food that will allow you to live a hundred years, just by eating one bowl a day,” says the fifth-generation owner of GANSO-SHIMADA-YA.
The most long-standing soba shop of Jindaiji has watched over Musashino as its scenery changed with time, meanwhile continuing to provide customers with delicious soba that has been passed down since the time of its establishment.
