Collection Cellar and Hills Wine Warehouse

The wine cellar collection of our owner, Tsutomu Shida, the founder of Shidax, is open for viewing.
The collection includes over 1,000 bottles of wine, including approximately 300 bottles of Opus One, ranging from the first vintage released in 1979 to the latest in 2018.
The basement houses a barrel aging cellar and a bottle aging cellar called "Hills Wine Warehouse."
There are over 100 barrels, made with French oak purchased from renowned regions like Bordeaux and Burgundy, lined up in the cellar.
The origin, manufacturer, and whether it's a new or old barrel can affect how the wine turns out. By combining various barrels, the flavor gains depth.
With prior reservation, you can also participate in a guided winery tour. It's a rare opportunity to learn about the facilities and vineyards while being guided. The tour is free for guests staying at Nakaizu EAST WINDS VILLAGE or Hotel Winery Hills, so why not join?
